Gabriel Espiniera didn’t start behind the bar with a shaker in hand or a cocktail menu memorized. He started as a barback — restocking, cleaning, and quietly observing the rhythm of the bar. It was in those early shifts that he learned the true hustle of hospitality.
“I realized quickly that being a great bar manager isn’t just about knowing your cocktails or running numbers,” Gabriel says. “It’s about how you lead your team.”

When asked about a mistake that taught him the most, Gabriel didn’t hesitate.
“Early on, I focused too much on the day-to-day tasks and not enough on the people doing them,” he admits. “I thought managing was about running a tight ship — but I learned the hard way that a bar only runs well when the team feels respected and supported.”
That shift in perspective transformed everything. Morale improved, service sharpened, and the bar began to operate with a new kind of energy. It was a lesson in leadership: respect isn’t just a nice-to-have — it’s essential.
Advice to His Younger Self
If he could go back and offer advice to his younger self just starting out behind the bar, Gabriel would focus on the art of controlled chaos.
“Being a great bartender isn’t just about how good your drinks taste — it’s about how well you move under pressure,” he says. “The real skill is multitasking - knocking out service tickets, engaging with guests, keeping your station tight, and still holding it down with your team.”
It’s a balancing act that requires sharp focus, calm energy, and the ability to lift the vibe around you — even when the bar is packed.
Crafting a Whiskey Story Behind the Bar
Gabriel’s appreciation for whiskey goes beyond flavor — it’s about storytelling.
“A whiskey stands out to me when it tells a story — not just on the label, but in the glass,” he explains. “I look for balance: boldness without being overpowering, smoothness without losing character.”
“Whether it’s a hint of spice, a rich oak finish, or a blend of smoke and sweetness, the whiskeys that linger are the ones that evolve with every sip. They make you pause — not just drink.”
The Heart of Leadership
Today, Gabriel finds deep fulfillment in the leadership side of his role — especially mentoring.
“Hiring bartenders and helping set them up for success is something I take pride in,” he says. “Being a leader doesn’t mean barking orders; it means showing up like a big brother — someone they can trust, learn from, and lean on.”
Watching his team grow in confidence and skill is one of the most rewarding parts of the job. It’s not just about managing a bar — it’s about building a culture where people thrive.
